Jack and his mother are very poor and have only their cow, Milky-white, to help them survive. When the cow stops giving milk, Jack is sent to the market to sell her, but he ends up trading the cow for a handful of strange-looking beans. His mother is angry and throws the beans out the window, but by the next morning, a massive beanstalk has grown all the way into the sky! Henry Cole, publishing under pen name Felix Summerly, popularized the tale in The Home Treasury (1845), and Joseph Jacobs rewrote it in English Fairy Tales (1890). Jacobs' version is most commonly reprinted today, and is believed to be closer to the oral versions than Tabart's because it lacks the moralizing.

Joseph Jacobs (1854-1916) was a prominent member of the English Folklore Society. English Fairy Tales is a collection of 87 classic English fairy tales collected and edited by Jacobs who had spent 10 years collecting them from written and oral sources. His style was chosen to appeal to young people.
