- 2–3 medium sweet potatoes (skin on or off)
- 1–2 tbsp avocado oi or water
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & pepper to taste
- Optional: fresh rosemary or cinnamon
Instructions:
- Preheat oven to 400°F (200°C).
- Wash and cube sweet potatoes evenly.
- Toss with oil, seasonings, and herbs.
- Spread on a baking sheet (parchment recommended).
- Roast for 25–30 minutes, flipping halfway for even browning.
- Store in glass containers for up to 5 days — add to salads, bowls, or enjoy as a side.
