• Fire-roasted corn

• Couscous

• Cilantro-lime dressing (mayo-based or Greek yogurt alt)

• Avocado

• Jalapeño (optional, for heat)

• Cotija cheese

• Salt, pepper, garlic powder

• Finish with a squeeze of lime
