Nun auch im Ganzen. Neuentdeckung eines Gemüsekohls
Als überdimensioniertes weißes Gemüse wurde der Karfiol lange Zeit eher stiefmütterlich behandelt. Hauptsächlich fand er sich zerhäckselt in Suppe oder mit Brösel gekocht auf österreichischen Tellern.
Mit dem Hype um vegane, insbesondere nordafrikanischer Küche, erstrahlt die Gemüsekohlvariante in neuem Licht. Mit Zatar oder Harissa eingerieben macht der Karfiolkopf einen hervorragenden Festtagsbraten und erfreut mit seiner Konsistenz selbst hartgesottene Fleischesser.
