富山県や石川県の辺りでは「堅豆腐」と呼ばれる「枕に使える」とか「つまづいたら生爪が剥がれる」とまで喩えられるほど極めてしっかりした豆腐が作られています。地元の方はオススメの食べ方として、この地方にある甘めのお醤油とワサビで頂くというのの他に「ゴーヤチャンプルー」も挙げていました。一見不思議に思えますが、この堅豆腐のルーツを紐解いていくと、意外に納得出来たりするのです・・・。
