Betina’s Veggie Scramble

Cut desired vegetables

Mushroom, spinach. Red onions, bell peppers (all colors), tomato (Betina’s usual mix)

Sautee in olive or avocado oil

Scramble with 3 eggs

Season with italian seasoning or garlic and herb seasoning

Jen’s Kale Salad (Lyla’s recipe)

Kale (cleaned) massaged with salt and olive oil

Peppitos

Dried cranberries

Candied walnuts

Blueberries

Dressing: Maple syrup and dijon mustard base with oil and vinegar (apple cider or red wine)

Seasoning: salt and pepper
