今週、坂の上に訪ねてきてくださったのは、北宇和郡松野町にあるNPO法人「森の息吹」施設長の森下孔明さん。近年注目されている「ジビエ」をテーマにお話を伺いました。「森の息吹」は12年前に開設されたジビエ加工施設。もともと町内の鳥獣被害対策として、捕獲された獣肉を町の特産品として有効活用する目的で設立されました。最近では農林水産省から表彰を受けたり、日本最大の料理コンテストで「森の息吹」の鹿肉を使った料理がグランプリを受賞するなど、着実に評価を高めています。今回は「上流階級の貴族だけが味わえる」「ジビエの栄養価」「メイドインジャパンのジビエ」の３つをキーワードに、「まつのジビエ」の世界を紐解きます。
