This is very different from any other role or job that the madam might have. If the madam wanted an investment manager, she'd simply review his past performance in a bank and expect that he'd do well in the new job. But that doesn't happen with chefs. We get assessed on the spot, not later. And a verdict would be made by our employer almost immediately, not at some future date.
