Si può bere quindi bene anche piwi? Coltivare vitigni di fatto creati dall’uomo vuol dire perdita delle nostre radici enoiche? Ne parliamo con Erika Prandini della cantina Pravis che è stata tra i pionieri della sperimentazione piwi iniziando più di vent’anni fa con una collaborazione con l’università di Freiburg.
