RECIPES FROM RITA: Pear Salad with Balsamic Vinaigrette

Dressing Ingredients:

1/3 cup olive oil

3 tablespoons balsamic vinegar – I used white but prefer dark (I was out of the dark)

2-3 teaspoons Dijon mustard

1 clove garlic, minced – scant teaspoon

Honey to taste – start with 1/2 teaspoon

Salt and pepper to taste

Salad Ingredients:

½ small red or sweet onion, very thinly sliced

5 oz arugula – about 5 cups – if you don’t care for arugula, mixed greens are good, too or a mix of arugula and other salad greens

3 pears or apples, thinly sliced

About 4 oz goat cheese – can use Feta, Havarti, whatever

1 cup or so dried fruit – I used apricots

3/4 cup nuts, toasted if you like (optional – sunflower or pumpkin seeds can be used as well)

Instructions

Whisk dressing ingredients.
Put arugula in salad bowl. Top with pears and onions.
Sprinkle on goat cheese, cranberries, and nuts.

Drizzle dressing over salad just before serving. Don’t toss it. As you dig in, dressing will distribute through the salad.More recipes at abouteating.com.*****
