Welcome to the Lowcountry Lunatics Podcast, where two Yankees-turned-Southerners throw tradition, chaos, and redemption into the same boiling pot — and serve it hot with a side of marinara.

I’m Joe Gallagher Jr., better known as Chef Giuseppe, the sauce-slinging founder of Apastioli Specialty Foods. My story is one for the books (literally — I wrote it): once kidnapped in the Bahamas, nearly nominated for a Grammy, hit by a truck, dragged through a years-long legal battle, and ultimately redeemed by faith, sobriety, and a jar of homemade sauce that turned into a brand sweeping across grocery shelves.

Across from me sits New York Nick, a full-blooded Italian with a quick wit, sharper tongue, and a knack for making the Lowcountry his playground. Together, we’re two paisans who never planned on starting a podcast, but after one wild conversation, the mics turned on and the madness hasn’t stopped since.
