Pero al hablar con la dueña de Taitu uno aprende que en Etiopía se come con las manos para preparar bocados para las personas queridas de la mesa, que para alguien venido de fuera una paella puede saber horrible, que la alimentación etíope está basada en un cereal desconocido o que Emebet, como buena parte de las mujeres de su país, aprendió a cocinar de niña platos como el doro wat. Un plato que hoy, 30 años después de haberlo cocinado por primera vez, Emebet sigue preparando en su restaurante.
