This episode's guest is Olia Hercules. Olia is a London-based Ukranian chef and food writer known for her cookbooks, columns and tv work. She trained at the renowned Leiths school of food and wine and went on to work as a Chef de Partie in a variety of restaurants including Ottolenhi. She is a regular food writer for the Guardian and has appeared on TV shows including weekend today and Saturday kitchen. Her cookbooks are a celebration of Eastern European cooking and include Mamushka: recipes from the Ukraine and beyond, Kaukasis: A culinary journey through Georgia, Azebejan and beyond and her new book Summer Kitchens that came out in June 2020.
