Aufs Brot gestrichen. Streichfähiges in vielen Farben.
Es gibt nur wenig, was sich nicht püriert oder cremig verrührt auf das Brot schmieren lässt. Mit Topfen, Sauerrahm und Butter können Ei, Thunfisch, Kürbis oder Bärlauch ohne weiteres vermengt werden, als Basis für vegane Aufstriche haben sich Bohnen und Linsen bewährt. Ob man die Streichwurst oder das „Verhackert“ dazu zählen mag, ist Definitionssache. Unbestritten und extrem beliebt aber ist ein anderer Heurigenklassiker: der Liptauer. Ob gekühlt oder temperiert, würzig oder mild – mit dem passenden Brot kommt ein Aufstrich so richtig zur Geltung.
