2020年に創業した函館発のウイスキーブランド「BEHIND THE CASK」。函館を拠点に、個性的でアーティスティックなボトリングを展開するインディペンデントボトラーとして注目を集め、2023年末には、道産大麦モルトのみを主原料とする「ディ・トリッパー蒸留所」を新たに立ち上げ、道南初となる国産ウイスキーの製造もスタートしました。今回は、函館・元町公園近く、昭和二年建築の歴史的建物・旧岡本邸に構えるBEHIND THE CASKの事務所を訪れ、代表の澤田さんにインタビュー。ウイスキー「Di Tripper」の試飲とともに、ブランド誕生の背景や、函館という街への想いを伺いました。クリエイターが集い、新しい挑戦が生まれ続ける街・函館。その未来を、ゆっくりと熟成させるように育まれていくBEHIND THE CASKの物語を、たっぷりとお届けします。
