 Die Schweinshaxe ist ein Teil des Beins vom Schwein, der sich zwischen Knie- oder Ellenbogengelenk und den Fußwurzelgelenken befindet und von einer Fettschicht, der so genannten Schwarte, umgeben ist. Das Fleisch ist sehr zart und aromatisch und sollte sich nach längerer Garzeit sehr leicht vom Knochen lösen lassen.
