今週、坂の上に訪ねてきてくださったのは、愛媛大学法文学部兼地域協働センター中予教授の和田寿博さん。和田さんは、2007年にポン菓子の研究と実践を学生とともに始められ、その実績は様々なメディアに取り上げられています。「おいり」「パン豆」「ドンパン」など様々な呼び名のあるポン菓子の研究は、平和学の一環だと語る和田さん。その発祥には、一人の女性の平和への願いが込められているのです。今回は「ポン菓子機の開発史」「国産ポン菓子機の願いは、健康と平和」「愛媛のポン菓子の食文化」をキーワードに、お話を伺いました。
