Tsukemono is a kind of food, mostly vegetables, that has been pickled in salt, rice bran, miso, or something else. 漬物とは、主に野菜を塩や糠や味噌などに漬けた食べもの。キュウリやナス、白菜や大根、梅干しなどが漬物の定番ですが、イカや昆布を使った北海道の松前漬けのようなものもあります。
デパートやスーパーには必ず漬物コーナーがあり、自宅で漬物を作る家庭も多いです。
一般的に漬物は、ごはんやおかゆ、お茶漬けなどと一緒に食べますが、塩分が強いため、日本酒や焼酎のつまみとしてもぴったりです。
漬物は野菜の穫れない冬に、春や夏に収穫した野菜を保存する目的で発達しました。日本各地に特産品を使った漬物があります。
特に京都では、京野菜と呼ばれる多くの野菜が栽培されており、それらを使用した漬物が名物になっています。
