Made from soybeans, tofu is a type of healthy food that has been eaten as shojin ryori (Buddhist vegetarian cuisine) for a great many years. Even now it is a very common food in Japan.

大豆から作られる豆腐は、非常に長い間、精進料理として食べられてきたヘルシーな食品。現在でも日本ではとても一般的な食品です。
豆腐は、調味料をかけてそのまま食べるほか、味噌汁や鍋などの料理の具として食べられています。
現在のようにスーパーやコンビニが多くなかった時代は、どの地域にも豆腐屋があり、パン屋と並んで"町一番の早起き"といわれていました。
40代以上の人の中には、子どもの頃に豆腐屋にお使いに行かされたことを覚えている人も多いようです。
また、今ではあまり見られませんが、明治時代から昭和にかけて、主に関東地方では、豆腐の売り子がラッパを吹きながら売り歩いていたことも、多くの人の記憶に残っています。
