Although now sushi is a gourmet cuisine, it was first mainly eaten at food stands and considered as a simple fast food. 江戸前寿司とは握り寿司のことを指し、江戸時代に花(華)屋与兵衛という料理職人が考案したものです。
江戸城の"前"の海、つまり現在の東京湾でとれた新鮮な魚を、手で握った小さい酢飯の上にのせて提供したのが、江戸前寿司の始まりです。
単に刺身をのせているだけのように見えて、実は火であぶったり酢でしめたりと、のせる魚貝にひと仕事を加えるのも、江戸前寿司の大きな特徴。これは食中毒を防ぐ知恵でもあったのです。
現在、寿司は高級料理ですが、当時は屋台で食べるのが主流の手軽なファーストフードでした。
1964年の東京オリンピックの頃までは、日本では屋台で寿司を立ち食いする光景が見られました。
