Chawanmushi is a dish made by mixing various ingredients along with a beaten egg and dashi stock in a small bowl. The bowl and its contents are then steamed together. 茶碗蒸しは、溶き卵とだし汁を合わせたものを、具材とともに小ぶりな器に入れ、器ごと蒸した料理です。
具材には主に、鶏肉や海老、かまぼこ、しいたけ、銀杏、三つ葉などが使われます。熱いままで食べますが、夏は冷やして食べる場合もあります。
茶碗蒸しは江戸時代からあったといわれ、当時は箸で食べたようですが、現在はスプーンで食べるのが一般的です。
茶碗蒸しは火加減に注意しないと、「す」と呼ばれるブツブツができてしまいます。
滑らかに作るのが難しいため、茶碗蒸しを作るのが得意な女性は「いいお嫁さんになれる」といわれることもあるようです。
スーパーやコンビニでは、完成品や、卵を加えるだけで作れる茶碗蒸しの素も手に入ります。
