今年の春のお彼岸は3月20日、最近は春分の日という言い方が一般的ですが、奈良ではやはりお彼岸という言葉に特別な意味を感じます。奈良七大寺に代表されるように、古くから仏教の教えが息づく土地で、「彼岸へ向かう」という感覚が自然とあります。「山笑う」という季語の通り、若草山もにっこり微笑むような春の表情でした。 そんな中いただいたのが、和牛のステーキにブロッコリーとわさびのピュレ、さらに奈良のお味噌や醤油にマルサラ酒を合わせたソース。実はブロッコリー、2026年4月から国の指定野菜になりましたが、一番おいしいのは冬の終わりから春先。寒さの中で育ったものは旨みがぎゅっと詰まっています。マルサラ酒はイタリア・シチリアの酒精強化ワインで、コクのある甘みが特徴。お肉にもよく合います。 奈良はシルクロードの東の終点とも言われ、正倉院にはペルシャや中国の影響を受けた品が残っています。今回訪れた「シルクロード」という名のレストランでも、そんな歴史のつながりを感じる味に出会えました。
